Stakeholders within the potato market has realized that something has to be done and
today there are a number of organizations and networks that all actively work to
preserve the Swedish agriculture and specifically the potato as a product.
The purpose with this essay is to examine how store managers in the Swedish grocery
stores view the handling of the potato in the store, the quality and packaging,
marketing and future consumption. The objective is to find out some
recommendations or ideas that the organisation Svensk Potatis, can use to develop the
potato as a product that is adapted to the trade and the consumers´ needs.
Ten phone interviews with staff in charge of produce in grocery stores where done.
The stores where chosen according to market shares and the interview subjects where
given fifteen questions, and the replies where then analyzed.
The result show that half of the respondents believe that the potato consumption will
decrease in the near future. It also shows that a development of the product is
necessary while the consumer asks for alternative potatoes that take short time to
prepare.
The background in the essay is a collaboration between Lena Andersson and Annika

Potatisen har länge haft en betydande roll i den svenska husmanskosten. Under de senaste fyrtio åren har konsumtionen av potatis nästan halverats från 87 kg/år och person till 46 kg/år och person. Potatisen har fått stor konkurrens av andra produkter som t.ex. pasta och ris. Potatisen är fortfarande mestadels en bulkvara som säljs i lösvikt, medan potatisens konkurrerande produkter har differentierats. Intressenter inom den svenska potatismarknaden har insett att någonting måste göras. Idag finns det ett flertal organisationer och nätverk som alla verkar för att bevara det svenska jordbruket och potatisen som produkt. Syftet med arbetet är att undersöka hur butikschefer i svenska matvarubutiker ser på hantering av potatis i butik, dess kvalitet, förpackning, exponering och framtiden för potatisen. Målet med examensarbetet är att komma fram till en del rekommendationer eller idéer, som branschorganisationen Svensk Potatis kan arbeta med. Rekommendationerna kan sedan användas för att vidareutveckla potatis som en produkt som är anpassad efter handelns och konsumentens behov. Telefonintervjuer gjordes med frukt- och gröntansvariga i tio olika dagligvarubutiker. Intervjuerna genomfördes i september 2007. Butikerna valdes ut efter hur stora marknadsandelar kedjorna de tillhörde hade på marknaden. Respondenterna fick svara på femton olika frågor som sedan analyserades. Resultatet visar att hälften av respondenterna tror att konsumtionen av potatis kommer att minska inom den närmsta framtiden. Vidare visar resultatet att en produktutveckling av potatis bör ske då konsumenten efterfrågar fler alternativ av potatis som kan tillagas snabbare. Bakgrundsdelen i examensarbetet har dels gjorts i samarbete mellan Lena Andersson och Annika Boredahl.
