Sumario:Tarhui (Lupinus rnutabilis) is a legume native to the Highlands (2 500 — 4 500 m above sea level) of Peru, with appreciable resistance to frost, drought and poor soils. Results obtained in this work confirms that tarhui growing up in Cuzco has a high protein content (42.7%on the average) and is a significant oil source (18.4% on the average). Tarhui is a bitter tasting legume due to the presence of alkaloids (0.92 to 1.36% ) which must be leached out before tarhui can be used as food.
