With around 25% protein (Cobb & Jones, 1973; Arya et al, 2016), groundnut kernels surpass meat, eggs, and fruit serving as an important food crop (FAO, 2022). The 40-50% oil content is used for culinary purposes, vegetable oil, cosmetics, and industrial applications. The kernels are consumed raw, roasted, boiled, or as snacks. |
