Two gaseous ozone concentrations (3 and 10 ppm) were applied on carcasses from Experiment 1 (Exp. 1, n = 100 test, n = 100 control) and Experiment 2 (Exp. 2, n = 100 test, n = 100 control), respectively. Cold chamber without ozone was used as control in both experiments. For mesophilic aerobic organism (MAO), coliform and Escherichia coli counts, 100 cm2 of each carcass was swabbed before and 10, 20 and 30 h after ozone application. In Exp. 1, the carcass entire surface was swabbed for Shiga-toxin (stx) gene detection. The counts of MAO were influenced by treatment and sampling time in both experiments. In Exp. 1, control carcasses had higher counts than ozonated carcasses at all sampling times, whereas the opposite occurred in Exp. 2. Coliform count was affected by sampling time in Exp. 2, whereas E. coli count was not affected in any experiment. All samples analyzed were stx-negative. Differences in carcass weight loss were not significant. In conclusion, gaseous ozone was not effective to reduce bacterial load or carcass weight loss. To our knowledge, this is the first study evaluating ozone effect on beef carcasses conducted in a commercial abattoir, not at laboratory scale. Future research would help demonstrate whether the use of ozone impacts on the quality and sensory characteristics of beef. |

Future research would help demonstrate whether the use of ozone impacts on the quality and sensory characteristics of beef. //Resumen: Se han evaluado diferentes tecnologías para promover la inocuidad alimentaria y mejorar la calidad microbiológica y la vida útil de los alimentos. El objetivo de este trabajo fue determinar el efecto del ozono gaseoso en la pérdida de peso de la canal de res y el recuento de microorganismos indicadores en un matadero exportador. Se aplicaron dos concentraciones de ozono gaseoso (3 y 10 ppm) a las canales del Experimento 1 (Exp. 1, n = 100 prueba, n = 100 control) y del Experimento 2 (Exp. 2, n = 100 prueba, n = 100 control), respectivamente. Se utilizó una cámara de frío sin ozono como control en ambos experimentos. Para los recuentos de organismos aeróbicos mesófilos (MAO), coliformes y Escherichia coli, se tomaron muestras de 100 cm2 de cada canal antes y 10, 20 y 30 h después de la aplicación de ozono. En el experimento 1, se tomó muestra de toda la superficie de la canal para la detección del gen de la toxina Shiga (stx). Los recuentos de MAO se vieron influenciados por el tratamiento y el momento del muestreo en ambos experimentos. En el experimento 1, las canales control tuvieron recuentos más altos que las canales ozonizadas en todos los momentos de muestreo, mientras que ocurrió lo contrario en el experimento 2. El recuento de coliformes se vio afectado por el momento del muestreo en el experimento 2, mientras que el recuento de E. coli no se vio afectado en ningún experimento. Todas las muestras analizadas fueron negativas para stx. Las diferencias en la pérdida de peso de la canal no fueron significativas. En conclusión, el ozono gaseoso no fue eficaz para reducir la carga bacteriana ni la pérdida de peso de la canal. Hasta donde sabemos, este es el primer estudio que evalúa el efecto del ozono en las canales de res, realizado en un matadero comercial, no a escala de laboratorio. Investigaciones futuras contribuirán a demostrar si el uso del ozono afecta la calidad y las características sensoriales de la res.
