description This study is a qualitative investigation on the perception of food quality in yams by farmers from two yam growing communities with different cultural backgrounds but located in the savanna agroecological zone of Nigeria (Federal Capital Territory (FCT), Abuja and Okeogun area of Oyo State). Focus group discussion (FGD) was used to collect data from respondents who were mainly yam farmers and traders. Results showed that the food quality of yam food products by the farmers is based mainly on sustainable, derivable income from cultivating the species and the varieties of yam and on the sensorial quality of the yam product. The most important food product from yam in both areas studied was pounded yam while textural quality was the most important food quality attribute considered. Farmers do not have a means of predicting or perceiving or knowing the food quality of yam food products before processing but they use indigenous knowledge such as pattern of leaf foliage, and smoothness and shape of the tuber to identify species and varieties rather than predict food quality. In view of these findings extension work is needed in order to enlighten or encourage the farmers on what food quality is, and the need to gear their production towards planting for food quality (nutritional, commercial, industrial, and utilization) rather for subsistence use only.

Cette étude est une recherche qualitative sur la perception de la qualité des produits alimentaires d’ignames par des fermiers dans deux communautés qui cultivent igname avec deux cultures différent mais situées dans la zone savane agro écologique du Nigeria (Territoire capital Fédéral, Abuja et Okeogun d’ Etat Oyo). Le groupe de discussion ciblé (FGD) a été employé pour rassembler des données des répondants qui sont principalement des fermiers et des commerçants d’igname. Les résultats ont prouvé que la qualité des produits alimentaires d’igname par les fermiers est basée principalement sur le revenu durable qui est gagné en cultivant une espèces ou une variété d’igname et sur la qualité sensorielle du produit de cette variété d’igname. Le produit alimentaire d’igname qui est le plus important dans les deux communautés est igname pilée était étudié, l’aspect méthodologique de la mesure sensorielle d’une caractéristique de texture était l’attribut le plus important de la qualité des produits alimentaires considérée. Les fermiers n’ont pas des moyens de deviner ou de discerner ou de savoir la qualité des produits alimentaires d’igname avant la transformation mais ils emploient la connaissance indigène telle que la quantité de feuillage et sa distribution, de l’aspect lisse et la forme de tubercule pour identifier des espèces et des variétés plutôt que de discerner la qualité des produits alimentaires.
