“…El ablandador fue desarrollado en base a una formulación única; se evaluó su efecto en la terneza sobre los cortes y fue comparado con un ablandador testigo, ambos fueron sometidos a dos pruebas, una preliminar donde participaron cinco personas para elegir el tiempo (15, 20 y 25min) durante el cual se aplicarían y estuvieran en similares condiciones al ser puestos a prueba en un análisis sensorial de mayor escala donde participaron veintiséis personas inexpertas y los resultados obtenidos fueron sometidos a un análisis estadístico en el programa SPSS (Statistical Package for the Social Sciences) versión 18 por medio de un ANDEVA (Análisis de varianza), donde se demostró que el tratamiento T1 (Ablandador a base de piña) tuvo un mejor efecto sobre la dureza de los cortes de carne bovina brindando una mayor terneza que los que fueron tratados con el ablandador testigo (T2), cumpliéndose de esta forma la hipótesis alternativa que plantea que el ablandador a base de piña es mejor que el testigo.…”
