Innovación tecnológica en la vinificación de Moscatel de Alejandría

“…La idea de presentar nuevas alternativas tecnológicas en la elaboración de vino base moscatel, nace de las necesidades de productores de uva de encontrar opciones de producción abriendo mercado y apuntando a nichos donde un producto diferenciado y especial tiene cabida, es por ello que el proyecto lleva a cabo una nueva opción de producción centrada a la generación de vinos de Moscatel de Alejandría tipo Straw wine o también denominados Raisin wine (vino de pasas) utilizando técnicas que se ocupan en otros países como Sudáfrica, España, Grecia, Austria, Dinamarca, Francia y otros. Se basa en un manejo especial del racimo, mediante el estrangulamiento del pedúnculo con el objetivo de deshidratar las bayas, disminuyendo la circulación de agua desde las raíces al racimo, favoreciendo la deshidratación de éste logrando así aumentar el contenido de azúcar y acidez. …”
